Drizzled with a simple powdered sugar glaze, every slice is irresistibly moist, sweet, and satisfying.
Ingredients
For the Bread:
- 1/3 cup light brown sugar
- 2 teaspoons ground cinnamon
- 2 apples, peeled and chopped (any variety you love — Granny Smith for tartness, Gala or Fuji for sweetness)
- 2 tablespoons granulated sugar (for tossing with the apples)
- 2/3 cup granulated sugar
- 1/2 cup (1 stick) unsalted butter, softened
- 2 large eggs
- 1½ teaspoons vanilla extract
- 1½ cups all-purpose flour
- 1¾ teaspoons baking powder
- 1/2 cup + 1 to 3 tablespoons milk (regular or almond milk)
- Pinch of salt
- Nonstick cooking spray (or butter + flour for greasing the loaf pan)
For the Glaze:
- 1/2 cup powdered sugar
- Milk (just enough for a drizzle-friendly consistency)
Instructions
1. Preheat & Prep
Preheat your oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan with nonstick spray or line it with parchment paper.
2. Make the Cinnamon Sugar
In a small bowl, stir together the 1/3 cup brown sugar and 2 teaspoons cinnamon. This will be used for layering inside the bread for a ribbon of flavor in every bite.
3. Prepare the Apples
Peel and dice your apples into small chunks. Toss them in a bowl with 2 tablespoons of granulated sugar. Set them aside and let them macerate slightly.
4. Mix the Batter
In a large mixing bowl, cream together the softened butter and 2/3 cup granulated sugar until light and fluffy (about 2–3 minutes). Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
5. Combine Dry Ingredients
In a separate bowl, whisk together the flour, baking powder, and pinch of salt. Slowly add the dry ingredients to the wet ingredients, alternating with the milk. Start and end with the dry ingredients. Stir until just combined — do not overmix, or the bread will become dense.
6. Layer the Batter
Spread half of the batter into your prepared loaf pan. Sprinkle with half of the cinnamon-sugar mixture and half of the chopped apples.
Repeat with the remaining batter, cinnamon-sugar, and apples. Using a butter knife, gently swirl through the batter a few times to marble the layers slightly — don’t fully mix.
7. Bake
Bake in the preheated oven for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
8. Cool Down
Let the bread cool in the pan for 10 minutes, then carefully transfer it to a wire rack to cool completely before glazing.
9. Glaze It
Whisk together the powdered sugar and a splash of milk until smooth and drizzleable. Drizzle the glaze over the cooled loaf in zigzag patterns or slow drips for a rustic look.
Notes & Tips:
- Want extra apple flavor? Add a dash of apple pie spice or a few tablespoons of applesauce to the batter.
- Make it nutty by adding chopped walnuts or pecans to the batter or on top.
- This bread stays moist for 2–3 days at room temperature and up to a week in the fridge. It’s also freezer-friendly!
