Classic Southern Oyster Dressing (Old-Fashioned & Rich Flavor)

Oyster dressing is a beloved Southern side dish, especially popular during holidays like Thanksgiving and Christmas. It’s savory, buttery, deeply seasoned, and filled with tender oysters that add a unique briny richness you can’t get from anything else. This recipe combines crumbled cornbread, day-old bread, aromatic vegetables, herbs, and fresh oysters for a comforting, traditional dish that always steals the table.

Ingredients

  • 4 cups crumbled cornbread
  • 2 cups day-old bread cubes
  • 1 stick (½ cup) unsalted butter
  • 1 large onion, finely chopped
  • 2 celery stalks, finely chopped
  • 2 cloves garlic, minced
  • 1 pint fresh oysters, drained (reserve oyster liquid)
  • 1 cup chicken or seafood broth (more if needed)
  • 2 large eggs, lightly beaten
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • ½ teaspoon white pepper (optional but traditional)
  • 1 teaspoon poultry seasoning
  • ½ teaspoon dried thyme
  • ½ teaspoon dried sage
  • 2 tablespoons fresh parsley, chopped
  • ½ teaspoon paprika (optional)

Instructions

1. Prepare the Bread Base

In a large mixing bowl, combine the crumbled cornbread and day-old bread cubes. Mixing both textures gives the dressing a perfect balance—soft but never mushy.

2. Cook the Aromatics

In a large skillet over medium heat, melt the butter.
Add the chopped onion and celery and cook for 5–7 minutes until soft and translucent.
Stir in the minced garlic and cook for 30 seconds until fragrant.

3. Add Seasoning

Season the vegetable mixture with salt, black pepper, white pepper, poultry seasoning, thyme, sage, and paprika. Stir well so the flavors bloom in the butter.

4. Combine Everything

Pour the butter-vegetable mixture over the bread mixture.
Add the chopped parsley and mix gently.

Slowly pour in the broth and about ½ cup of the reserved oyster liquid, stirring until the mixture is moist but not soupy.

5. Add Oysters & Eggs

Gently fold in the fresh oysters.
Add the beaten eggs and mix just until combined—do not overmix.

6. Bake

Preheat oven to 350°F (175°C).
Butter a baking dish and transfer the dressing evenly into it.

Bake uncovered for 35–45 minutes, until the top is golden brown and the center is set but still moist.

Tips for Best Oyster Dressing

  • Chop oysters coarsely for texture, or leave them whole for a more traditional feel.
  • If the dressing looks dry before baking, add a little more broth.
  • For a crispier top, dot with extra butter before baking.
  • This dish pairs perfectly with roast turkey, chicken, or baked ham.
