Why Everyone Loves This Recipe

  • Golden, crispy outside with a soft center
  • Fresh strawberries + creamy filling = perfect balance
  • Quick to prepare, no oven needed
  • Ideal for brunch tables, special mornings, or treat nights

Ingredients

For the Roll-Ups

  • 8 slices white sandwich bread (soft and fresh)
  • 1 cup fresh strawberries, finely chopped
  • 4 oz (115 g) cream cheese, softened
  • 2 tablespoons powdered sugar
  • ½ teaspoon vanilla extract

For the French Toast Coating

  • 2 large eggs
  • ¼ cup milk
  • ½ teaspoon cinnamon
  • 1 tablespoon granulated sugar

For Cooking & Topping

  • 2–3 tablespoons butter
  • Extra granulated sugar (optional)
  • Powdered sugar, for dusting
  • Maple syrup or strawberry sauce, for serving

Step-by-Step Instructions

1. Prepare the Strawberry Filling

In a bowl, mix the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy. Gently fold in the chopped strawberries. Set aside.
Tip: Chop strawberries very small so the roll-ups seal well and don’t leak.

2. Flatten the Bread

Remove crusts from each slice of bread. Using a rolling pin or glass, flatten each slice until thin but not torn. This helps the bread roll easily and hold the filling.

3. Fill and Roll

Spread about 1–1½ tablespoons of the strawberry cream cheese mixture onto one edge of each bread slice. Roll tightly into a log shape, pressing gently to seal the edge.

4. Make the Egg Mixture

In a shallow bowl, whisk together eggs, milk, cinnamon, and sugar until well combined.

5. Dip the Roll-Ups

Quickly dip each roll-up into the egg mixture, coating all sides. Do not soak—just a light coating.

6. Cook Until Golden

Heat butter in a non-stick skillet over medium heat. Place roll-ups seam-side down first. Cook, turning gently, until all sides are golden brown and slightly crispy (about 2–3 minutes per side).

7. Finish and Serve

Remove from the pan and place on paper towels briefly. Dust with powdered sugar or roll lightly in granulated sugar if desired. Serve warm with maple syrup, strawberry sauce, or fresh strawberries.

Helpful Tips

  • Use day-old bread for better structure
  • Don’t overfill to avoid leaks
  • Medium heat gives the best golden color without burning
  • Serve immediately for best texture

Delicious Variations

  • Add Nutella with strawberries
  • Swap strawberries for blueberries or bananas
  • Add lemon zest to the filling for freshness
  • Roll in cinnamon sugar after cooking

How to Store

These are best fresh, but leftovers can be refrigerated up to 24 hours. Reheat in a pan or air fryer to restore crispiness.
