These Golden Cheesy Chicken Dinner Bombs are soft and fluffy on the inside, crispy on the outside, and smothered in gooey cheese and herbs.  Ingredients:

For the Dough:

  • 2 cups all-purpose flour
  • 1 tbsp instant yeast
  • 1 tsp sugar
  • ½ tsp salt
  • ¼ cup vegetable oil
  • ¾ cup warm water (adjust as needed)

For the Filling:

  • 2 cooked chicken breasts, shredded
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • ½ cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • 3 tbsp mayonnaise or cooking cream
  • Salt & black pepper to taste
  • ½ tsp paprika
  • ½ tsp dried oregano

For Topping:

  • Slices of cheddar or mozzarella cheese
  • Melted butter
  • Extra oregano and black pepper for garnish

 Directions:

1. Make the Dough:

In a bowl, mix yeast, sugar, and warm water. Let sit for 10 minutes until bubbly. Add flour, salt, and oil. Knead until you get a soft, elastic dough. Cover and let it rise for about 1 hour.

2. Prepare the Filling:

In a skillet, sauté onion and garlic until fragrant. Add the shredded chicken, paprika, oregano, salt, and pepper. Mix well and let it cool. Stir in mayo and cheeses until creamy.

3. Shape the Bombs:

Divide the dough into equal balls. Flatten each ball, add 1 spoonful of filling, and seal to form a stuffed roll. Place seam-side down in a greased baking dish.

4. Add the Cheese Topping:

Brush the tops with melted butter. Add a slice of cheese on each roll. Sprinkle with oregano and black pepper.

5. Bake:

Bake in a preheated oven at 350°F (180°C) for 20–25 minutes until golden and the cheese is bubbling.
