  • 1 tsp minced garlic
  • ½ tsp Italian herbs (oregano, thyme, basil)
  • Salt and black pepper to taste

For the Roasted Carrots:

  • 2–3 whole carrots, peeled
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Optional: pinch of dried herbs (thyme or rosemary)

For the Mashed Potatoes:

  • 2 medium red or Yukon gold potatoes, skin on
  • 1 tbsp butter
  • 2–3 tbsp milk or cream
  • Salt to taste

Garnish:

  • Fresh chopped parsley (optional)

 Step-by-Step Instructions

  Step 1: Roast the Carrots

  1. Preheat your oven to 400°F (200°C).
  2. Toss peeled whole carrots in olive oil, salt, pepper, and herbs.
  3. Place on a baking sheet and roast for 25–30 minutes until fork-tender and caramelized.

Roasted carrots bring natural sweetness and earthy flavor. They also add vibrant color and texture to your plate—perfect for food photography and social shares.

 Step 2: Cook the Chicken

  1. Pat the chicken thigh dry and season it with garlic, herbs, salt, and pepper.
  2. Heat a pan over medium-high heat with olive oil or butter.
  3. Sear the chicken for 4–5 minutes on each side until golden, juicy, and cooked through.
  4. Remove from the pan and reserve any drippings for later.

Tip: Let the chicken rest for a few minutes before slicing. The pan drippings can be spooned over the final plate for an ultra-savory boost.

Step 3: Make Creamy Mashed Potatoes

  1. Boil the potatoes (skin on) in salted water until fork-tender (about 15–20 minutes).
  2. Drain and mash with butter, milk or cream, and a pinch of salt until smooth and creamy.
  3. Taste and adjust seasoning as needed.

Leaving the skins on gives a rustic texture and added fiber, which makes the dish feel more homemade.

 Plating the Dish

  1. On a large dinner plate or shallow bowl, spoon a generous scoop of mashed potatoes.
  2. Slice the chicken and place it on top.
  3. Add the roasted carrots to the side. Savory Garlic Mushroom Chicken with Spinach
