1. 1 big foreleg trotter ( scalded to remove impurities)
Hind leg is good for more collagen but a bit more fat only.
2. 1-11/2 bottles of ready mixed sweet n sour vinegar. ( bought from store)
3. Sesame oil
4. Young or old ginger crushed ( amount ur preference)
5. Rock sugar to taste
6. 1 or more hydrated dried seeded chilli( I used only 1)
1. Heat oil n fry ginger till aromatic
2. Fry cut trotters
3. Add vinegar n 1/2 bottle of water
4. Bring to a boil.
5. Slow flame n stew / braise for 3/4 hour .
Tenderness of meat is individual preference so check .
6. Add in some sugar n taste
