Apple Fritter Bites

Preheat the oven to 400°F and mist a baking sheet with cooking spray.

In a medium bowl, combine the flour, baking powder, cinnamon, and salt.

In a large bowl, beat together the melted butter and sugar until well combined. Add the egg, vanilla extract, and applesauce, and whisk until smooth.

Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Gently fold in the chopped apples.

Drop tablespoon-sized portions of batter onto the prepared baking sheet, leaving space between each.

Bake for 10 minutes, then remove from the oven and switch the broiler to high.

To make the glaze, whisk together the powdered sugar and apple juice or cider until smooth and pourable.

Brush the glaze over the warm fritter bites, allowing some to run down the edges. Broil for 2-4 minutes, or until the glaze begins to bubble and caramelize.

Remove from the oven and generously coat the tops of the fritters with the remaining glaze.
Allow the glaze to set for 15 minutes before serving.
