Recipe for Memaw’s Cathead biscuits

I posted the picture yesterday as a new member and received many requests for sharing the recipe. So, here it is,

CatHead Biscuits are named for their size… Big as a cat’s head. Mom always said her mother, my memaw, made them big so you could put a big slab of ham on it.

I remember memaw making them everyday.
She used what looked like to me, a big round metal wash bowl.

She kept it in a cupboard that always had flour in it.

Ingrédients

2 cups self rising flour

1 to 2 Tablespoons of shortening ( memaw used lard and mom did too.

1 cup buttermilk

1/2 teaspoon salt

measure flour and salt into bowl that has flour

sprinkled in it, cut lard into flour until its crumbly

(about pea size) I use a fork or spoon to do this.

add buttermilk and using your floured hands,

lightly mix until a soft dough forms. I usually have

to add a bit more flour as I’m mixing to keep it

from being too sticky. This must be why memaw

kept flour in the bowl all the time. I don’t roll

dough out, ( you can) but instead, I pull off pieces

of dough and roll it in my hands like I saw my

mother and memaw do it. Always use a round

pan and grease it well ( I always use bacon

grease) Place biscuits touching each other and

bake in 400 degree oven 15 to 20 minutes. makes

about 6 to 7 biscuits. I brush melted butter on

top.
