Juice of 1 lime
Tortillas for serving
For the Mexican Rice:
1 cup long-grain white rice
2 cups chicken broth
1 tablespoon tomato paste
1/2 cup diced tomatoes (canned or fresh)
1 small onion, finely chopped
1 clove garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon smoked paprika
2 tablespoons olive oil
Salt and pepper to taste
Fresh cilantro for garnish (optional)

Instructions:

Steak Fajitas:
Marinate the Steak:

In a large bowl, combine 2 tablespoons olive oil, minced garlic, ground cumin, chili powder, smoked paprika, oregano, salt, pepper, and lime juice.
Add the sliced steak and mix well to coat. Let it marinate for at least 30 minutes.
Cook the Vegetables:

Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
Add the sliced bell peppers and onion. Sauté until they are tender and slightly charred, about 5-7 minutes. Remove from the skillet and set aside.
Cook the Steak:

In the same skillet, add the marinated steak strips.
Cook until browned on all sides and cooked to your desired level of doneness, about 5-7 minutes.
Return the sautéed vegetables to the skillet, toss to combine, and heat through.
Serve:

Serve the steak fajitas hot with warm tortillas. You can add your favorite toppings like sour cream, guacamole, salsa, or shredded cheese.
Mexican Rice:
Prepare the Rice:

Heat 2 tablespoons of olive oil in a medium saucepan over medium heat.
Add the chopped onion and minced garlic. Sauté until the onion is translucent, about 2-3 minutes.
Stir in the rice and cook for another 2 minutes, stirring frequently, until the rice is lightly toasted.
Cook the Rice:

Add the tomato paste, diced tomatoes, ground cumin, chili powder, smoked paprika, salt, and pepper. Stir to combine.
Pour in the chicken broth and bring the mixture to a boil.
Once boiling, reduce the heat to low, cover, and simmer for about 18-20 minutes, or until the rice is cooked and the liquid is absorbed.
Fluff the rice with a fork before serving. Garnish with fresh cilantro if desired.
Combine and Serve:
Serve the steak fajitas alongside the flavorful Mexican rice. Enjoy this delicious and satisfying meal with family and friends!
