Granny Cake

1 cup evaporated milk
1/2 cup sugar
1/2 cup (1 stick) unsalted butter
1 teaspoon vanilla extract

Preparation:

1️⃣ Preheat Oven:

Preheat your oven to 350º F and lightly grease a 9×13-inch baking dish with butter or non-stick spray.

2️⃣ Prepare Batter:

In a large bowl, whisk together the sugar, flour, baking soda, and salt.
Mix in the eggs and crushed pineapples (with juice) until well combined.

3️⃣ Assemble Cake:

Pour the batter into the prepared baking dish.
Sprinkle an even layer of chopped pecans and brown sugar on top of the batter.

4️⃣ Bake:

Place the baking dish in the preheated oven and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

5️⃣ Prepare Icing:

While the cake is baking, combine the evaporated milk, sugar, and butter in a medium saucepan over medium-high heat. Bring the mixture to a boil.
Remove from heat and stir in the vanilla extract.

6️⃣ Finish Cake:

Once the cake is done, remove it from the oven and immediately pour the hot icing over the hot cake.
Allow the cake to cool so it absorbs the icing.

7️⃣ Serve:

Let the cake cool completely before slicing and serving. Enjoy!
