Creamy Potato Soup with Bacon

Ingredients

  • 1 small yellow onion diced
  • 3 stalks of celery diced
  • 2 carrots peeled and diced
  • 2 cloves garlic minced
  • 1/3 cup all purpose flour (40 grams)
  • 2 cups chicken stock
  • 2 pounds russet potatoes peeled and diced (907 grams)
  • 2 cups whole milk (236.588 ml)
  • salt and pepper to taste
  • shredded cheddar cheese for topping
  • diced scallions for topping
  • bacon pieces for topping

How To Make Creamy Potato Soup with Bacon

  1. In a large heavy-bottomed stock pot, cook the until just crispy. It will continue to cook as you move on to the next step, so you do not want it to get overly brown in this first step.6 slices thick-cut
