Baked Apple Fritters

Ingredients:

For the Fritters:
2 cups all-purpose flour
1/2 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2/3 cup milk (whole or 2%)
2 large eggs
2 tablespoons unsalted butter, melted
2 teaspoons vanilla extract
2 cups finely chopped apples (peeled and cored; about 2 medium apples)

For the Glaze:
1 cup powdered sugar
2-3 tablespoons milk
1/2 teaspoon vanilla extract

Instructions:

Preheat Oven and Prepare Pan:
Preheat your oven to 350°F (175°C). Lightly grease a 12-cup muffin tin or line with paper liners.

Prepare the Fritter Batter:
In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.

Mix Wet Ingredients:
In another bowl, whisk together the milk, eggs, melted butter, and vanilla extract until well combined.

Combine Wet and Dry Ingredients:
Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped apples gently.

Fill Muffin Tin:
Spoon the batter evenly into the prepared muffin tin, filling each cup almost to the top.

Bake the Fritters:
Bake in the preheated oven for 18-22 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean.

Cool and Prepare Glaze:
Allow the fritters to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.

Make the Glaze:
In a small bowl, whisk together the powdered sugar, milk (start with 2 tablespoons), and vanilla extract until smooth. Add more milk as needed to achieve a drizzling consistency.

Glaze the Fritters:
Drizzle the glaze over the cooled fritters. You can also dip the tops of the fritters into the glaze for a thicker coating.

Serve:
Allow the glaze to set for a few minutes before serving. Enjoy your baked apple fritters warm or at room temperature.
