This Sweet Hawaiian Crockpot Chicken is a deliciously easy dish that combines tender chicken with a sweet and tangy Hawaiian-inspired sauce. Perfect for a hassle-free dinner!

Ingredients

2 pounds boneless, skinless chicken thighs or breasts
1 cup pineapple chunks (fresh or canned, drained)
1 cup barbecue sauce (preferably a sweet or smoky variety)
1/2 cup teriyaki sauce
1/4 cup soy sauce
1/4 cup brown sugar
3 cloves garlic, minced
1 tablespoon grated fresh ginger (or 1 teaspoon ground ginger)
1 red bell pepper, sliced
1 green bell pepper, sliced
1 small onion, sliced
1 tablespoon cornstarch (optional, for thickening)
2 tablespoons water (if using cornstarch)
Cooked rice, for serving
Sliced green onions, for garnish (optional)
Sesame seeds, for garnish (optional)

Instructions:

Prepare the Crockpot:

Place the chicken thighs or breasts in the bottom of the crockpot.
Mix the Sauce:

In a medium bowl, combine the pineapple chunks, barbecue sauce, teriyaki sauce, soy sauce, brown sugar, minced garlic, and grated ginger. Stir well.
Add Vegetables and Sauce:

Pour the sauce mixture over the chicken in the crockpot.
Add the sliced bell peppers and onion on top of the chicken.
Cook:

Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
Thicken the Sauce (Optional):

If you prefer a thicker sauce, mix the cornstarch with 2 tablespoons of water to make a slurry. Stir it into the sauce about 30 minutes before the end of the cooking time, and let it cook on high until the sauce thickens.
Serve:

Remove the chicken from the crockpot and shred it with two forks. Return the shredded chicken to the crockpot and mix it with the sauce and vegetables.
Serve the Sweet Hawaiian Chicken over cooked rice, and garnish with sliced green onions and sesame seeds if desired.
