CHEESY RANCH POTATOES AND SMOKED SAUSAGE RECIPE

INGREDIENTS:

2 pounds of baby potatoes, quartered
1 pound of smoked sausage, sliced
1 cup of shredded cheddar cheese
1 packet of ranch seasoning mix
1/4 cup of olive oil
2 tablespoons of chopped parsley (optional)
Salt and pepper to taste

INSTRUCTIONS:

PREHEAT your oven to 400°F (200°C).
PLACE the quartered potatoes in a large mixing bowl.
DRIZZLE the olive oil over the potatoes and SPRINKLE with the ranch seasoning mix. TOSS to coat evenly.
ADD the sliced smoked sausage to the bowl and TOSS again to combine.
SPREAD the potato and sausage mixture evenly on a large baking sheet.
BAKE in the preheated oven for 25-30 minutes or until the potatoes are tender and golden brown.
REMOVE the baking sheet from the oven and SPRINKLE the shredded cheddar cheese over the top.
RETURN the baking sheet to the oven and BAKE for an additional 5 minutes or until the cheese is melted and bubbly.
GARNISH with chopped parsley, if desired, and SERVE immediately.
