Beef Tips and Gravy over creamy mashed potatoes

Ingredients:

For the Beef Tips:

2 lbs beef stew meat or sirloin tips, cubed
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
2 cups beef broth
1/2 cup red wine (optional)
1 tablespoon Worcestershire sauce
1 teaspoon soy sauce
1 teaspoon dried thyme
1 teaspoon paprika
Salt and pepper to taste
2 tablespoons cornstarch mixed with 2 tablespoons water (for thickening)

For the Mashed Potatoes:

4 large russet potatoes, peeled and cubed
1/2 cup milk
1/4 cup butter
Salt and pepper to taste
Fresh parsley for garnish (optional)

Directions:

Prepare the Beef Tips:

Heat olive oil in a large skillet over medium-high heat. Add the beef cubes and sear until browned on all sides, about 5-7 minutes. Remove the beef and set aside.
In the same skillet, add the chopped onion and garlic. Sauté until the onion is softened, about 3-4 minutes.
Add the beef broth, red wine (if using), Worcestershire sauce, soy sauce, thyme, paprika, salt, and pepper to the skillet. Stir to combine.
Return the beef to the skillet and bring to a simmer. Cover and cook on low heat for 1 to 1.5 hours, or until the beef is tender.
Once the beef is tender, mix the cornstarch with water and stir it into the skillet. Cook for another 3-5 minutes, or until the gravy has thickened to your liking.

Prepare the Mashed Potatoes:

While the beef is cooking, place the cubed potatoes in a large pot and cover with cold water. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.
Drain the potatoes and return them to the pot. Add the milk, butter, salt, and pepper. Mash until smooth and creamy.

Assemble and Serve:

Serve the beef tips and gravy over a generous helping of mashed potatoes. Garnish with fresh parsley if desired.
