Ingredients:

For the Garlic Herb Butter Pork Bites:

1 lb pork tenderloin, cut into bite-sized pieces
3 tbsp butter, divided
3 cloves garlic, minced
1 tbsp fresh thyme, chopped
1 tbsp fresh rosemary, chopped
1 tbsp fresh parsley, chopped
Salt and pepper to taste
1 tbsp olive oil

For the Creamy Mashed Potatoes:

2 lbs potatoes, peeled and cut into chunks
1/2 cup heavy cream
1/4 cup butter
Salt and pepper to taste
1/4 cup sour cream (optional)
2 cloves garlic, minced (optional)

Directions:

Prepare the Mashed Potatoes:

Place the potato chunks in a large pot and cover with cold water. Add a pinch of salt.
Bring to a boil over medium-high heat, then reduce the heat and simmer until the potatoes are tender about 15-20 minutes.
Drain the potatoes and return them to the pot. Add the heavy cream, butter, salt, pepper, and sour cream (if using). Mash until smooth and creamy. Set aside and keep warm.

Cook the Pork Bites:

Heat olive oil in a large skillet over medium-high heat. Add the pork bites and season with salt and pepper. Cook until browned on all sides, about 6-8 minutes.
Reduce the heat to medium and add 2 tablespoons of butter to the skillet. Once melted, add the minced garlic and cook until fragrant, about 1 minute.
Add the chopped thyme, rosemary, and parsley. Stir to coat the pork bites in the herb butter. Cook for another 2-3 minutes until the pork is fully cooked and the herbs are well incorporated.

Serve:

Serve the garlic herb butter pork bites over the creamy mashed potatoes. Garnish with additional fresh herbs if desired.
