Ingredients:
4 large eggs
2 cups whole milk
1/2 cup granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
Ground nutmeg (for sprinkling)
Instructions:
Preheat Oven: Preheat your oven to 325°F (163°C). Place a kettle of water on to boil.
Prepare the Custard Mixture: In a mixing bowl, whisk together the eggs, sugar, salt, and vanilla extract until well combined. Gradually add the milk while whisking continuously until the mixture is smooth.
Pour into Ramekins: Pour the custard mixture evenly into 4 to 6 individual ramekins.
Create a Water Bath: Place the filled ramekins in a large baking dish. Carefully pour the boiling water into the baking dish, surrounding the ramekins to about halfway up their sides. This water bath will help the custard cook evenly and prevent it from cracking.
Bake: Sprinkle a pinch of ground nutmeg on top of each custard. Carefully transfer the baking dish to the preheated oven. Bake for 45-55 minutes or until the custard is set around the edges but still slightly jiggly in the center.
Cool: Remove the ramekins from the water bath and let them cool on a wire rack. The custard will continue to set as it cools.
Serve: Once cooled to room temperature, the custards can be served as is or chilled in the refrigerator before serving.
