Amish Apple Fritter

Ingredients:

2 cups all-purpose flour
1/4 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
2 large eggs
3/4 cup whole milk
2 teaspoons vanilla extract
2 tablespoons unsalted butter, melted
2 cups diced apples (about 2 large apples, peeled and cored)
Vegetable oil, for frying
Glaze:
1 1/2 cups powdered sugar
3-4 tablespoons milk
1 teaspoon vanilla extract
Instructions:
Prepare the Batter:
In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg.
In a separate bowl, whisk the eggs, milk, and vanilla extract until well combined.
Add the wet ingredients to the dry ingredients and stir until just combined.
Stir in the melted butter and then fold in the diced apples.
Heat the Oil:
In a deep skillet or Dutch oven, heat about 2 inches of vegetable oil to 350°F (175°C). Use a thermometer to maintain the correct temperature.
Fry the Fritters:
Using a large spoon or ice cream scoop, carefully drop the batter into the hot oil, a few fritters at a time. Do not overcrowd the pan.
Fry the fritters for about 2-3 minutes per side, or until golden brown and cooked through.
Use a slotted spoon to remove the fritters and transfer them to a paper towel-lined plate to drain excess oil.
Prepare the Glaze:
In a medium bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency by adding more milk if needed.
Glaze the Fritters:
Dip each warm fritter into the glaze, allowing any excess to drip off.
Place the glazed fritters on a wire rack set over a baking sheet to let the glaze set.
Serve:
Serve the Amish Apple Fritters warm or at room temperature.
Enjoy these delightful Amish Apple Fritters as a sweet treat any time of day!
