Ingredients:
4 boneless, skinless chicken breasts
1/4 cup olive oil
1/4 cup fresh lemon juice
Zest of 1 lemon
4 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup chicken broth
Lemon slices, for garnish
Fresh parsley, chopped, for garnish
Directions:
Preheat your oven to 375°F (190°C).
In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, dried oregano, thyme, rosemary, salt, and pepper.
Place the chicken breasts in a baking dish. Pour the lemon marinade over the chicken, turning to coat each piece evenly. Allow the chicken to marinate for at least 15 minutes, or up to 2 hours in the refrigerator for more flavor.
Pour the chicken broth around the chicken in the baking dish.
Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
Garnish with lemon slices and fresh parsley before serving.
