Cream Cheese and Bacon Stuffed Doritos Chicken

Ingredients:

4 boneless, skinless chicken breasts
1 cup cream cheese, softened
1/2 cup cooked bacon, crumbled
1 cup shredded mozzarella cheese
2 cups nacho cheese-flavored Doritos, crushed into fine crumbs
1 cup all-purpose flour
2 large eggs, beaten
1 tablespoon milk
Salt and pepper to taste
2 tablespoons olive oil

Directions:

Preheat your oven to 375°F (190°C).
In a small bowl, mix together the softened cream cheese, crumbled bacon, and shredded mozzarella cheese until well combined.
Carefully cut a pocket into the side of each chicken breast, making sure not to cut all the way through.
Stuff each chicken breast with the cream cheese and bacon mixture, then secure with toothpicks if necessary.
Set up a breading station: place the flour in one shallow dish, beaten eggs and milk in a second dish, and crushed Doritos in a third dish.
Season the chicken breasts with salt and pepper, then dredge each in flour, dip into the egg mixture, and coat thoroughly with crushed Doritos.
Heat olive oil in a large oven-safe skillet over medium heat. Once hot, add the chicken breasts and cook for 2-3 minutes on each side, until golden brown.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the filling is hot and bubbly.
Remove from the oven, let rest for a few minutes, then serve hot.
