Impossible Taco Pie

Ingredients:

1 lb ground beef
1 small onion, chopped
1 packet (1 oz) taco seasoning mix
1 can (15 oz) diced tomatoes, drained
1 cup shredded cheddar cheese
1 cup milk
3 large eggs
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup frozen corn (optional)
1/2 cup chopped fresh cilantro (for garnish)
Salsa and sour cream (for serving)

Directions:

Preheat oven to 375°F (190°C). Grease a 9-inch pie dish.
In a large skillet, cook the ground beef and chopped onion over medium heat until the beef is browned and the onion is softened. Drain any excess fat.
Stir in the taco seasoning and drained diced tomatoes. Cook for an additional 2-3 minutes, then remove from heat.
In a separate bowl, whisk together the milk, eggs, flour, baking powder, salt, and pepper until smooth.
Pour the beef mixture into the prepared pie dish, spreading it evenly.
Sprinkle the shredded cheddar cheese over the beef mixture.
Pour the milk mixture over the top of the beef and cheese, spreading it evenly.
Bake for 30-35 minutes, or until the pie is set and golden brown on top.
Let the pie cool for 5 minutes before slicing. Garnish with chopped cilantro and serve with salsa and sour cream.
