Ingredients:

1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1 tbsp baking powder
1 tsp ground cinnamon

1/2 cup granulated sugar
1 tsp ground cinnamon
2 tbsp unsalted butter, melted
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Lightly grease a mini muffin tin or line it with mini paper liners.
Prepare the Fritter Batter:
In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, ginger, cloves, and salt.
In a separate bowl, mix the pumpkin puree, milk, melted butter, egg, and vanilla extract until smooth and well combined.
Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
Bake the Fritter Bites:
Spoon the batter into the prepared mini muffin tin, filling each cup about 3/4 full.
Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
Coat the Fritter Bites:
In a small bowl, mix together the sugar and cinnamon for the coating.
Once the fritter bites are done baking, allow them to cool slightly, then brush them with melted butter and roll them in the cinnamon sugar mixture until evenly coated.
