Garlic Parmesan Chicken Lasagna Roll-Ups

Ingredients:

8 lasagna noodles
2 cups cooked chicken, shredded
1 cup ricotta cheese
1/2 cup grated Parmesan cheese
2 cups shredded mozzarella cheese
1/4 cup fresh parsley, chopped
2 cups Alfredo sauce
4 cloves garlic, minced
1 teaspoon Italian seasoning
Salt and pepper to taste
1/4 cup grated Parmesan for topping

Directions:

Preheat oven to 375°F (190°C). Cook lasagna noodles according to package directions. Drain and lay flat on a clean surface.
In a large bowl, combine shredded chicken, ricotta cheese, 1/2 cup Parmesan cheese, 1 cup mozzarella cheese, minced garlic, Italian seasoning, salt, and pepper. Mix well.
Spread about 1/4 cup of the chicken mixture evenly over each lasagna noodle. Roll up the noodles and place them seam-side down in a greased baking dish.
Pour Alfredo sauce over the top of the lasagna roll-ups, covering them evenly. Sprinkle the remaining mozzarella cheese and grated Parmesan over the top.
Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
Garnish with chopped parsley before serving.
