Ingredients:
2 tbsp butter
1 small yellow onion, diced
1 small green bell pepper, diced
8 oz brown mushrooms, minced
1/2 tsp kosher salt
1/2 tsp black pepper
2 tbsp ketchup
2 tbsp Worcestershire sauce
2 large eggs
2 lbs lean ground beef
1 cup panko breadcrumbs
8 oz provolone cheese slices
Instructions:
Preheat your oven to 375°F (190°C) and grease a loaf pan.
In a skillet, melt the butter and sauté the diced onion, green bell pepper, and minced mushrooms until they’re soft. Let them cool down after cooking.
In a large bowl, mix together the ketchup, Worcestershire sauce, eggs, ground beef, cooled veggies, and panko breadcrumbs until everything is combined.
Spread half of the meat mixture into the loaf pan. Layer half of the provolone cheese on top, then add the remaining meat mixture on top of the cheese.
Bake in the preheated oven for 40 minutes. After that, add the rest of the provolone cheese on top and bake for another 15-20 minutes, until the cheese is melted and golden.
Once done, let the meatloaf rest for 10 minutes before slicing and serving.
