Ingredients:

2 tablespoons vegetable oil
1/2 pound ground beef
1 cup fideo noodles (or other small pasta)
2 medium potatoes, peeled and diced
1/2 cup onion, finely chopped
2 cloves garlic, minced
1 can (14.5 ounces) diced tomatoes
4 cups beef broth
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon paprika
1/2 teaspoon chili powder
Salt and pepper to taste
Fresh cilantro, chopped (for garnish)

Directions:

Heat vegetable oil in a large pot over medium heat. Add ground beef and cook until browned. Drain excess fat if needed.
Add chopped onion and minced garlic to the pot. Cook until the onion is translucent.
Stir in the diced tomatoes, cumin, oregano, paprika, and chili powder. Cook for 2-3 minutes to let the flavors meld.
Add beef broth and bring to a boil.
Stir in fideo noodles and potatoes. Reduce heat and simmer for 15-20 minutes, or until the noodles and potatoes are tender.
Season with salt and pepper to taste.
Garnish with chopped cilantro before serving.
