Cowboy Meatloaf and Potato Casserole

Ingredients:

1 pound ground beef
1 onion, finely chopped
2 cloves garlic, minced
1 cup breadcrumbs
¼ cup ketchup
2 tablespoons Worcestershire sauce
1 teaspoon dried thyme
Salt and pepper to taste
4 large potatoes, peeled and thinly sliced
1 cup shredded cheddar cheese
Chopped fresh parsley for garnish (optional)

Instructions:

Preheat Oven:

Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
Prepare the Meatloaf:

In a large bowl, combine the ground beef, chopped onion, minced garlic, breadcrumbs, ketchup, Worcestershire sauce, dried thyme, salt, and pepper. Mix until well incorporated.
Shape and Arrange:

Transfer the meatloaf mixture to the center of the prepared baking dish, shaping it into a loaf. Arrange the sliced potatoes around the meatloaf, overlapping them slightly. Season the potatoes with additional salt and pepper.
Bake Covered:

Cover the dish with foil and bake for 45 minutes.
Add Cheese:

Remove the foil and sprinkle shredded cheddar cheese over the meatloaf and potatoes. Return to the oven and bake uncovered for an additional 15 minutes, or until the cheese is melted and bubbly and the meatloaf is cooked through.
Garnish and Serve:

Garnish with chopped fresh parsley if desired. Serve warm.
Enjoy your hearty Cowboy Meatloaf and Potato Casserole, a satisfying and flavorful dish perfect for a comforting meal!
