Ingredients:
4 boneless chicken breasts, pounded thin
4 jalapeños, sliced in half and seeded
1 cup shredded cheddar cheese
1/2 cup cream cheese, softened
8 slices smoked bacon
2 tbsp BBQ sauce
1 tsp smoked paprika
Salt and pepper to taste
2 tbsp fresh cilantro, chopped (for garnish)
Instructions:
Preheat oven to 375°F (190°C).
Mix cream cheese and cheddar cheese in a bowl.
Stuff each jalapeño half with the cheese mixture.
Place stuffed jalapeños on each chicken breast, then roll the chicken tightly around them.
Wrap each chicken roll with bacon slices, securing with toothpicks if needed.
Place the rolls on a baking sheet, brush with BBQ sauce, and sprinkle with smoked paprika, salt, and pepper.
Bake for 25-30 minutes until chicken is cooked through and bacon is crispy.
Garnish with chopped cilantro before serving.
Notes:
Adjust the spice level by using milder peppers or adding more jalapeños for extra heat!
