Ingredients

For the Shrimp:

1 pound large shrimp, peeled and deveined
2 tablespoons Cajun seasoning
1 tablespoon olive oil
1 tablespoon unsalted butter
1 bell pepper, diced (any color)
1 small onion, diced
3 cloves garlic, minced
1/2 teaspoon red pepper flakes (optional for extra heat)
1/4 cup chicken broth or water
1 tablespoon fresh lemon juice
2 tablespoons fresh parsley, chopped
Salt and pepper, to taste
For the Rice:

1 cup long-grain white rice
2 cups chicken broth or water
1 tablespoon butter
Salt, to taste

Instructions

Cook the Rice:

In a medium saucepan, bring the chicken broth (or water) and butter to a boil.
Add the rice and a pinch of salt, then reduce the heat to low. Cover and simmer for 15-18 minutes, or until the rice is tender and the liquid is absorbed.
Fluff the rice with a fork and keep warm.
Prepare the Shrimp:
4. In a large bowl, toss the shrimp with the Cajun seasoning, ensuring they are evenly coated.
5. In a large skillet, heat the olive oil and butter over medium-high heat.
6. Add the diced bell pepper and onion to the skillet. Cook for 3-4 minutes, or until softened.
7. Stir in the minced garlic and red pepper flakes (if using) and cook for an additional 1 minute until fragrant.

Cook the Shrimp:
8. Add the seasoned shrimp to the skillet and cook for 2-3 minutes per side, or until the shrimp are pink and cooked through.
9. Pour in the chicken broth (or water) and lemon juice, stirring to combine. Cook for another 1-2 minutes, allowing the flavors to meld and the sauce to slightly thicken.
10. Remove from heat and stir in the chopped parsley. Season with salt and pepper to taste.

Serve:
11. Divide the cooked rice among serving plates.
