Ingredients:
4 boneless, skinless chicken breasts
1 (8 oz) package of cream cheese, softened
1 cup shredded cheddar cheese
6 slices of bacon, cooked and crumbled
2 cups crushed Doritos (nacho cheese flavor)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon paprika
Salt and pepper to taste
2 large eggs, beaten
1/4 cup all-purpose flour
2 tablespoons olive oil
Instructions:
Preheat the oven: Set your oven to 375°F (190°C). Lightly grease a baking dish.
Prepare the filling: In a medium bowl, combine the softened cream cheese, shredded cheddar, and crumbled bacon. Add garlic powder, onion powder, salt, and pepper to taste. Mix until smooth.
Stuff the chicken: Carefully slice a pocket into each chicken breast without cutting all the way through. Stuff the pocket with the cream cheese and bacon mixture. Use toothpicks to secure the opening if needed.
Coat the chicken: Set up three bowls: one with flour, one with beaten eggs, and one with crushed Doritos. Season the flour with paprika. Dredge each stuffed chicken breast in the flour, dip it into the eggs, and then press it into the crushed Doritos to coat.
Sear the chicken: In a skillet, heat the olive oil over medium heat. Sear the chicken breasts for 2-3 minutes on each side until golden and crispy.
Bake: Transfer the chicken to the prepared baking dish and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature reaches 165°F/74°C).
Serve: Let the chicken rest for a few minutes, then remove any toothpicks. Serve hot with your favorite sides.
