Who’s up for a loaded, cheesy, bacon-packed pasta?  This Bacon Cheeseburger Pasta is perfect for dinner tonight!

Ingredients:

12 oz pasta (penne or rotini)
1 lb ground beef
6 slices bacon, chopped
1 small onion, diced
2 cloves garlic, minced
1 (14.5 oz) can diced tomatoes, drained
1 cup cheddar cheese, shredded
1/2 cup cream cheese
1 cup beef broth
1 tablespoon ketchup
1 tablespoon mustard
Salt and pepper to taste
2 tablespoons fresh parsley, chopped (optional)

Directions:

Cook pasta according to package instructions. Drain and set aside.
In a large skillet, cook bacon over medium heat until crispy. Remove bacon from the skillet, leaving the fat behind.
Add the diced onion to the skillet and cook for 2-3 minutes until softened. Add the garlic and sauté for another minute.
Add ground beef to the skillet and cook until browned, breaking it apart as it cooks. Drain any excess fat.
Stir in diced tomatoes, beef broth, ketchup, mustard, salt, and pepper. Let simmer for 5-7 minutes to combine flavors.
Add the cream cheese and shredded cheddar to the skillet. Stir until melted and creamy.
Add the cooked pasta and bacon back into the skillet, stirring to combine. Cook for another 2-3 minutes to heat everything through.
Garnish with fresh parsley, if desired, and serve immediately.
