Garlic Chicken Fried Rice
Aromatic Garlic Chicken Stir-Fried Rice
Ingredients:
2 cups cooked white rice, chilled
2 chicken breasts, diced
2 cloves garlic, minced
1 cup mixed vegetables (such as peas, carrots, and corn)
2 eggs, beaten
2 tablespoons soy sauce
1 tablespoon sesame oil
Salt and pepper to taste
Green onions for garnish (optional)
Directions:
In a large skillet or wok, heat some oil over medium-high heat. Add the diced chicken and minced garlic. Cook until the chicken is cooked through and the garlic is fragrant.
Push the chicken to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until fully cooked.
Add the mixed vegetables to the skillet and cook until they are tender.
Add the chilled rice to the skillet, breaking up any clumps of rice. Stir-fry everything together to combine.
Pour the soy sauce and sesame oil over the rice mixture. Continue to stir-fry until everything is well combined and heated through. Season with salt and pepper to taste.
Garnish with green onions, if desired, and serve hot.
