Garlic Parmesan Chicken Chops with Cheesy Scalloped Potatoes

Ingredients:

For the Chicken Chops:

4 boneless chicken breasts (instead of pork chops)
1/2 cup grated Parmesan cheese
1/4 cup breadcrumbs
2 cloves garlic (minced)
1 tsp dried oregano
1 tsp paprika
Salt and pepper (to taste)
2 tbsp olive oil
For the Cheesy Scalloped Potatoes:

4 large potatoes (thinly sliced)
1 1/2 cups shredded cheddar cheese
1/2 cup grated Parmesan cheese
1 cup heavy cream
2 tbsp butter
2 cloves garlic (minced)
Salt and pepper (to taste)
Fresh parsley (for garnish)

Instructions:

1 Preheat oven to 400°F (200°C).
2 Mix Parmesan, breadcrumbs, garlic, oregano, paprika, salt, and pepper in a bowl.
3 Coat chicken breasts with olive oil and cover with the Parmesan mixture.
4 Place chicken in a greased baking dish and bake for 25-30 minutes.
5 Meanwhile, melt butter in a saucepan, add garlic, and cook until fragrant. Add cream, cheddar, and Parmesan, stirring until smooth.
6 In a separate baking dish, layer potatoes and pour the cheese sauce over them.
7 Cover and bake scalloped potatoes for 45-50 minutes or until tender.

8Garnish both chicken and potatoes with fresh parsley before serving.

Notes:

You can swap the cheddar cheese with mozzarella for a different flavor.
Serve with a light salad for a complete meal!
