Ingredients:
For the Cheesy Garlic Bread:
4 slices of thick Italian or sourdough bread
1/4 cup unsalted butter, softened
2 cloves garlic, minced
1/2 tsp garlic powder
1/4 cup Parmesan cheese, grated
1/2 cup mozzarella cheese, shredded
1/4 cup fresh parsley, chopped
For the Shrimp:
1/2 lb medium shrimp, peeled and deveined
1 tbsp olive oil
1 tsp lemon juice
Salt and pepper to taste
1/4 tsp smoked paprika (optional)
For the Grilled Cheese:
1 cup sharp cheddar cheese, shredded
1 cup Monterey Jack cheese, shredded
2 tbsp butter, for grilling
Instructions:
Prepare the Cheesy Garlic Bread:
Preheat your oven to 375°F (190°C). In a small bowl, mix the softened butter, minced garlic, garlic powder, and chopped parsley. Spread this mixture evenly on one side of each bread slice.
Sprinkle the Parmesan and mozzarella cheeses evenly over the buttered side of the bread slices. Place the bread on a baking sheet and bake for 8-10 minutes, or until the bread is golden and the cheese is melted and bubbly.
Cook the Shrimp:
In a skillet over medium heat, heat the olive oil. Add the shrimp, lemon juice, salt, pepper, and smoked paprika (if using). Cook the shrimp for 2-3 minutes on each side until they are pink and fully cooked. Remove from heat and set aside.
Assemble the Grilled Cheese:
Take two slices of the cheesy garlic bread, and layer the cooked shrimp on one slice. Sprinkle the cheddar and Monterey Jack cheese over the shrimp, and top with the second slice of bread, cheesy side facing in.
Heat a skillet or griddle over medium heat and melt 1 tbsp of butter. Place the assembled sandwich in the skillet and grill for 3-4 minutes on each side, or until the bread is golden brown and the cheese inside is fully melted.
