GARLIC BUTTER STEAK BITES AND MASH

Ingredients:

For the Steak Bites:
11/2 Ibs sirloin steak, cut into bite-sized pieces
4 cloves garlic, minced
4 tablespoons unsalted butter
2 tablespoons olive oil
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
For the Mashed Potatoes:
2 Ibs russet potatoes, peeled and cut into chunks
1/2 cup whole milk
4 tablespoons unsalted butter
1/4 cup sour cream
Salt and pepper to taste

Directions:

Step 1: Prepare the Mashed Potatoes
Place the potato chunks in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook until the potatoes are fork-tender, about 15-20 minutes. Drain the potatoes and return them to the pot. Add the milk, butter, and sour cream. Mash until smooth and creamy.
Season with salt and pepper to taste. Keep warm.
Step 2: Cook the Steak Bites
In a large skillet, heat the olive oil over medium-high heat.
Season the steak bites with salt and pepper. Add the steak bites to the skillet in a single layer, cooking in batches if necessary. Cook for 2-3 minutes per side, or until browned and cooked to your desired level of doneness.
Remove the steak bites from the skillet and set aside.
