Chili-Rubbed Pork Burrito with Cheese and Veggies
Ingredients
For the Chili-Rubbed Pork:
1.5 lbs pork shoulder or pork loin, cut into chunks
2 tbsp chili powder
1 tsp cumin
1 tsp paprika
1 tsp garlic powder
1/2 tsp salt
1/2 tsp black pepper
2 tbsp olive oil
For the Omelet Filling:
4 large eggs
1/4 cup milk
Salt and pepper, to taste
1/2 cup cooked ground meat (beef, turkey, or chicken)
1/2 cup bell peppers, diced
1/4 cup green sauce (salsa verde)
For the Burrito Assembly:
4 large tortillas (flour or corn)
1 cup shredded white cheese (like Monterey Jack or queso blanco)
1 cup chili (your favorite recipe or canned)
1 cup diced vegetables (like tomatoes, onions, and jalapeños)
Fresh cilantro, for garnish (optional)
Sour cream or guacamole, for serving (optional)
Instructions
Prepare the Chili-Rubbed Pork:
In a small bowl, mix together the chili powder, cumin, paprika, garlic powder, salt, and black pepper.
Rub the spice mixture all over the pork chunks, ensuring they are well coated.
In a large skillet, heat the olive oil over medium-high heat. Add the pork and sear on all sides until browned. Cook until the pork is tender, about 20-25 minutes, stirring occasionally. You can also cook it in a slow cooker on low for 6-8 hours.
Make the Omelet Filling:
In a bowl, whisk together the eggs, milk, salt, and pepper.
In a non-stick skillet, scramble the eggs over medium heat until just set. Add the ground meat, diced bell peppers, and green sauce, mixing until combined. Remove from heat.
Assemble the Burritos:
Warm the tortillas in a dry skillet or microwave until pliable.
On each tortilla, layer a portion of the chili-rubbed pork, the omelet filling, and a sprinkle of shredded cheese.
Roll the tortillas tightly, folding in the sides as you go to secure the filling. Place the burritos seam-side down in a baking dish.
Top with Cheese and Chili:
Pour the chili over the top of the burritos, and sprinkle additional cheese and diced vegetables on top.
Bake:
