French Onion Beef and Noodles
Ingredients:
1 lb beef sirloin or stew meat (cut into bite-sized pieces)
1 tbsp olive oil
2 large onions (thinly sliced)
2 cloves garlic (minced)
2 cups beef broth
1 tbsp Worcestershire sauce
1 tsp dried thyme
8 oz egg noodles
1 cup shredded Gruyère or Swiss cheese
Salt and pepper to taste
Fresh parsley (for garnish)
Instructions:
1 Heat olive oil in a large skillet over medium heat. Season the beef with salt and pepper, then brown the pieces for 4-5 minutes. Remove the beef and set aside.
2 In the same skillet, add the onions and cook for 10-15 minutes, stirring occasionally, until caramelized. Add the minced garlic and cook for another minute.
3 Stir in the beef broth, Worcestershire sauce, and thyme. Return the beef to the skillet and let it simmer for 15 minutes until tender.
4 Meanwhile, cook the egg noodles according to package instructions. Drain and set aside.
5 Stir the cooked noodles into the beef mixture, then sprinkle the shredded cheese over the top. Cover and let the cheese melt for 2-3 minutes.
6 Garnish with fresh parsley and serve hot.
Notes:
For extra flavor, top with crispy fried onions before serving.
Substitute the Gruyère with mozzarella or provolone if you prefer.
