Ingredients:
For the Fritter Bites:
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 cup unsalted butter, melted
1/2 cup milk
1 teaspoon vanilla extract
1 large egg
1 cup fresh blueberries
For the Glaze:
1 cup powdered sugar
2 tablespoons milk
1/2 teaspoon vanilla extract
Directions:
Preheat the oven to 375°F (190°C) and grease a mini muffin tin.
In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
In a separate bowl, combine melted butter, milk, vanilla extract, and egg. Mix well.
Add the wet ingredients to the dry ingredients and stir until just combined.
Gently fold in the blueberries.
Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
Bake for 15-18 minutes, or until a toothpick inserted into the center of a fritter comes out clean.
Let the fritter bites cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
For the Glaze:
In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
Drizzle the glaze over the cooled fritter bites.
