Ingredients:

1.5 lb cod fillet (4-6 pieces)
1/4 cup fresh parsley, chopped
Lemon Sauce:
5 tbsp fresh lemon juice
5 tbsp extra virgin olive oil
2 tbsp melted butter
5 garlic cloves, minced
For Coating:
1/3 cup all-purpose flour
1 tsp ground coriander
3/4 tsp sweet Spanish paprika
3/4 tsp ground cumin
3/4 tsp kosher salt
1/2 tsp black pepper
Instructions:
Preheat oven to 400°F.
In a bowl, mix lemon juice, olive oil, and melted butter (keep the garlic for later).
In another bowl, combine flour, coriander, paprika, cumin, salt, and pepper.
Pat the cod dry. Dip each fillet in the lemon mixture, then dredge in the flour mix.
Heat olive oil in an oven-safe pan and sear cod fillets for 2 minutes on each side until golden brown.
Add minced garlic to the remaining lemon sauce and pour over the fish.
Bake cod for 10 minutes in the oven until it flakes easily with a fork.
Sprinkle with fresh parsley before serving.
Serving Ideas:
Pair with a Greek salad or roasted vegetables for a complete meal.
