Pork Schnitzel with Dijon Gravy – a delightful twist on a classic
Ingredients:
4 boneless pork chops (about 1/2 inch thick)
1 cup all-purpose flour
2 large eggs
1 tablespoon Dijon mustard
1 cup breadcrumbs
Salt and pepper to taste

For the Dijon Gravy:
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
1 cup chicken broth
2 tablespoons Dijon mustard

Directions:
Prepare the Pork Chops:
Begin by tenderizing the pork chops with a meat mallet until they are about 1/4 inch thick. Season both sides with salt and pepper.
Set Up a Breading Station:
In three shallow dishes, place the flour in the first, beat the eggs with the Dijon mustard in the second, and put the breadcrumbs in the third.
Coat the Pork Chops:
Dredge each pork chop in flour, shaking off excess. Dip into the egg mixture, ensuring they are well coated, then press into the breadcrumbs to form a crispy coating.
Fry the Pork Schnitzel:
