Ingredients:

1 pound bacon, diced
1 large onion, chopped
2 cloves garlic, minced
2 pounds potatoes, peeled and cubed
4 cups chicken broth
1 cup heavy cream
1/2 cup grated cheddar cheese
1/4 cup sour cream
1/4 teaspoon red pepper flakes (optional)
Salt and pepper to taste
Instructions:
Cook bacon: Cook bacon in a large pot or slow cooker over medium heat until crispy. Remove bacon and set aside.
Sauté vegetables: Add onion and garlic to the pot. Sauté until softened.
Add potatoes and broth: Add potatoes, chicken broth, and reserved bacon fat to the pot. Stir to combine.
Cook: Cook on low for 4-6 hours, or until potatoes are tender.
Blend: Blend the soup until smooth.
Stir in cream and cheese: Stir in heavy cream, cheddar cheese, sour cream, red pepper flakes, salt, and pepper.
Heat: Heat over low heat until heated through.
Serve hot, topped with crumbled bacon and chopped green onions if desired.
