Ingredients

2 (6 oz) filet mignon steaks, about 1-1.5 inches thick
Salt and pepper, to taste
2 tablespoons olive oil
2 tablespoons unsalted butter
8 oz (225g) mushrooms, sliced
2 cloves garlic, minced
1/2 cup dry red wine
1 cup beef broth
1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
1 teaspoon Dijon mustard (optional)
Fresh parsley, chopped (for garnish)
Instructions
Season the Steaks: Generously season the filet mignon steaks with salt and pepper on both sides.

Sear the Steaks: In a large skillet, heat olive oil over medium-high heat. Once hot, add the steaks and sear for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. Remove the steaks from the skillet and set aside to rest.

Sauté the Mushrooms: In the same skillet, add the butter. Once melted, add the sliced mushrooms and sauté for about 5-7 minutes, or until they are browned and tender. Add minced garlic and cook for an additional minute until fragrant.

Deglaze with Wine: Pour in the red wine, scraping the bottom of the skillet to release any browned bits. Bring to a simmer and let it cook for about 2-3 minutes, allowing the wine to reduce slightly.

Add Broth and Seasonings: Stir in the beef broth, thyme, and Dijon mustard (if using). Simmer for about 5-7 minutes, allowing the sauce to thicken slightly. Taste and adjust seasoning if needed.

Return the Steaks: Once the sauce has thickened, return the filet mignon steaks to the skillet. Spoon the mushroom wine sauce over the steaks and let them simmer in the sauce for an additional 2-3 minutes to heat through.
