Longhorn Steakhouse Parmesan Chicken
Ingredients:
4 boneless, skinless chicken breasts
1 cup all-purpose flour
2 large eggs
1 cup grated Parmesan cheese
1 cup panko breadcrumbs
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup olive oil
1 cup marinara sauce
1 cup shredded mozzarella cheese
Fresh parsley, chopped (for garnish)
Directions:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In three separate shallow bowls, place flour in one, whisk eggs in another, and in the third, combine the panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, dried basil, oregano, salt, and black pepper.
Dredge each chicken breast in flour, then dip into the whisked eggs, and finally coat with the breadcrumb mixture, pressing to adhere.
In a large skillet, heat olive oil over medium heat. Brown the chicken breasts on both sides, about 3-4 minutes per side.
Transfer the browned chicken breasts to the prepared baking sheet. Top each breast with marinara sauce and sprinkle with shredded mozzarella cheese.
Bake for 15-20 minutes, or until the chicken is fully cooked through and the cheese is melted and bubbly.
Garnish with fresh parsley and serve with your favorite side dish.
