Crockpot Pierogi Casserole with Kielbasa

Warm up your family with this hearty and comforting Crockpot Pierogi Casserole with Kielbasa! This dish combines the flavors of classic pierogi with tender kielbasa, making it a perfect meal for busy days. Just set it and forget it!

Ingredients:

1 lb kielbasa, sliced
1 (16 oz) package frozen pierogi (cheese and potato or your choice)
1 medium onion, diced
1 cup sour cream
1 cup shredded cheddar cheese
1 cup chicken broth
2 cups sauerkraut, drained (optional)
1 tsp garlic powder
Salt and pepper to taste
Fresh parsley, for garnish

Directions:

Layer Ingredients:
In the bottom of your crockpot, layer half of the sliced kielbasa. Then, add half of the frozen pierogi and half of the diced onion.

Add Sauerkraut (if using):
If you’re using sauerkraut, layer half of it over the pierogi.

Repeat Layers:
Repeat the layers with the remaining kielbasa, pierogi, onion, and sauerkraut.

Prepare Sauce:
In a bowl, mix together the sour cream, chicken broth, garlic powder, salt, and pepper until well combined. Pour this mixture evenly over the layered ingredients in the crockpot.

Cook:
Cover and cook on low for 6-7 hours or high for 3-4 hours, until the pierogi are cooked through and the kielbasa is heated.

Add Cheese:
In the last 15 minutes of cooking, sprinkle the shredded cheddar cheese on top and cover to let it melt.

Serve:
Once cooked, gently stir the casserole and serve hot. Garnish with fresh parsley for a pop of color!
