2 lbs Yukon Gold or Russet potatoes, peeled and chopped

Marinate the Chicken:
In a large bowl, whisk together the buttermilk, garlic powder, onion powder, paprika, salt, and pepper. Submerge the chicken pieces and marinate for at least 1 hour (or overnight for deeper flavor).
Prepare the Flour Coating:
In a shallow dish, combine the flour, cayenne pepper (if desired), and a pinch of salt and pepper.
Coat the Chicken:
Remove the chicken from the buttermilk, letting the excess drip off. Dredge each piece in the seasoned flour mixture, ensuring a thick, even coat. Let the chicken rest for a few minutes to allow the coating to set.
Fry the Chicken:
