Mushroom Swiss Cheese Meatloaf

Ingredients:

1 lb (450 g) ground beef
1 cup mushrooms, finely chopped
1 small onion, finely chopped
2 cloves garlic, minced
1 cup breadcrumbs
1/2 cup milk
1 large egg
1 teaspoon Worcestershire sauce
1 teaspoon Italian seasoning
Salt and pepper to taste
1 cup shredded Swiss cheese (plus extra for topping)
1/2 cup ketchup (for glaze)

Instructions:

Preheat the Oven:

Preheat your oven to 350°F (175°C).
Sauté the Vegetables:

In a skillet over medium heat, add a bit of oil and sauté the chopped mushrooms, onion, and garlic until the mushrooms release their moisture and the onions are translucent (about 5-7 minutes). Remove from heat and let cool slightly.
Prepare the Meat Mixture:

In a large mixing bowl, combine the ground meat, sautéed mushrooms and onions, breadcrumbs, milk, egg, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix until just combined (do not overmix).
Add the Cheese:

Gently fold in the shredded Swiss cheese, reserving some for topping.
Shape the Meatloaf:

Transfer the mixture to a loaf pan or shape it into a loaf on a baking sheet lined with parchment paper.
Glaze the Meatloaf:

Spread the ketchup evenly over the top of the meatloaf and sprinkle with any remaining Swiss cheese.
Bake:

Bake in the preheated oven for about 60-70 minutes, or until the internal temperature reaches 160°F (70°C) and the meatloaf is cooked through.
Rest and Serve:

Remove from the oven and let it rest for 10 minutes before slicing. Serve warm with your favorite sides.
