Banana Bread Cake with Cream Cheese Frosting

This Banana Bread Cake is a perfect twist on the classic banana bread, made even more irresistible with a rich, creamy cream cheese frosting. Soft, moist, and full of banana flavor, it’s a hit for any occasion!

Ingredients:

For the Cake:

2 ripe bananas (mashed)
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter (softened)
3/4 cup sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup sour cream or Greek yogurt

For the Cream Cheese Frosting:

8 oz cream cheese (softened)
1/4 cup unsalted butter (softened)
2 cups powdered sugar
1 teaspoon vanilla extract
1-2 tablespoons milk (optional, for thinning)

Directions:

Preheat Oven:
Preheat your oven to 350°F (175°C). Grease and flour an 8×8-inch baking pan, or line it with parchment paper for easy removal.

Make the Cake Batter:
In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
In a large bowl, cream the butter and sugar together until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla and mashed bananas.
Add the dry ingredients to the banana mixture, alternating with the sour cream, until everything is combined and smooth.

Bake:
Pour the batter into the prepared pan and smooth out the top. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
Allow the cake to cool completely before frosting.

Prepare the Cream Cheese Frosting:
In a medium bowl, beat together the cream cheese and butter until smooth. Gradually add the powdered sugar, beating until light and fluffy. Stir in the vanilla extract. If the frosting is too thick, add milk 1 tablespoon at a time until desired consistency is reached.

Frost the Cake:
Once the cake is completely cooled, spread the cream cheese frosting evenly over the top.

Serve and Enjoy:
Slice into squares and enjoy your delicious Banana Bread Cake with Cream Cheese Frosting!

Perfect for breakfast, dessert, or an afternoon snack!
