This creamy and hearty Chicken Cordon Bleu Soup is a delicious twist on the classic dish, filled with tender chicken, ham, Swiss cheese, and a touch of Dijon mustard for that perfect flavor. It’s a cozy meal that’s easy to make and sure to please

Ingredients

Chicken Breast: 2 large, cooked and shredded (about 2 cups)
Ham: 1 cup, diced
Butter: 3 tablespoons
Onion: 1 small, diced
Garlic: 2 cloves, minced
All-Purpose Flour: 1/4 cup
Chicken Broth: 4 cups
Heavy Cream: 1 cup
Milk: 1 cup
Dijon Mustard: 1 tablespoon
Swiss Cheese: 1 1/2 cups, shredded
Salt and Black Pepper: to taste
Fresh Parsley: for garnish (optional)
Croutons or Toasted Baguette Slices: for serving (optional)

Directions

Cook the Onion and Garlic:
In a large pot or Dutch oven, melt the butter over medium heat. Add the diced onion and cook for about 5 minutes, until softened. Add the minced garlic and cook for an additional 1-2 minutes.

Make the Roux:
Sprinkle the flour over the onions and garlic, stirring to form a roux. Cook for 2-3 minutes until the flour is golden brown.

Add the Liquids:
Gradually whisk in the chicken broth, milk, and heavy cream, ensuring there are no lumps.

Simmer and Add Protein:
Stir in the shredded chicken, diced ham, and Dijon mustard. Bring the soup to a simmer over medium-low heat, stirring occasionally, for about 15 minutes.

Add the Cheese:
Lower the heat and add the shredded Swiss cheese, stirring until it melts smoothly into the soup. Season with salt and black pepper to taste.

Serve:
Ladle the soup into bowls and garnish with fresh parsley. Serve with croutons or toasted baguette slices if desired.

Tips:

For added flavor, use smoked ham or smoked chicken.
Substitute Swiss cheese with Gruyère or add a touch of Parmesan for extra richness.
