Crispy Garlic Parmesan Chicken with Rustic Potatoes
Ingredients:
2 boneless, skinless chicken breasts
2 tablespoons olive oil
3 cloves garlic, minced
1 cup grated Parmesan cheese
1 teaspoon Italian seasoning
Salt and pepper to taste
4 medium potatoes, diced
1 tablespoon butter
1 tablespoon fresh parsley, chopped
Directions:
Prepare the Potatoes: Heat a large skillet over medium heat. Add olive oil and butter. Once melted, add diced potatoes, season with salt and pepper, and cook for 10-12 minutes, stirring occasionally, until potatoes are golden and crispy. Remove and set aside.
Cook the Chicken: In the same skillet, add a little more olive oil. Season the chicken breasts with salt, pepper, and Italian seasoning. Cook on medium heat for 6-7 minutes per side, or until the chicken is golden and cooked through.
Garlic Parmesan Sauce: In the same skillet, add minced garlic and cook for 1 minute until fragrant. Sprinkle Parmesan cheese over the chicken and stir until the cheese starts to melt, forming a creamy coating.
Assemble: Serve the garlic Parmesan chicken alongside the crispy potatoes. Garnish with fresh parsley.
