Ingredients:

1 lb beef stew meat or chuck roast, cut into cubes
2 tablespoons olive oil
2 medium onions, thinly sliced
3 cloves garlic, minced
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
4 cups beef broth
1 cup water
1 tablespoon Worcestershire sauce
8 oz egg noodles
1 tablespoon cornstarch (optional, for thickening)

Directions:

Prepare the Beef:
In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the beef cubes and brown on all sides, about 5-7 minutes. Remove the beef from the pot and set aside.

Caramelize the Onions:
In the same pot, add the sliced onions and cook over medium heat, stirring occasionally, until they are golden and caramelized, about 15-20 minutes. Add minced garlic and cook for another 1-2 minutes until fragrant.

Build the Flavor:
Return the browned beef to the pot. Sprinkle in the thyme, salt, and black pepper. Stir to combine the ingredients.

Add Liquids:
Pour in the beef broth, water, and Worcestershire sauce. Stir well to combine and bring to a boil. Reduce the heat to low and simmer, uncovered, for 30 minutes, allowing the flavors to meld together.

Cook the Noodles:
Add the egg noodles to the pot and cook according to the package instructions, about 8-10 minutes, until they are tender and fully cooked. If you’d like the sauce to be thicker, mix the cornstarch with a little water and stir it into the pot. Cook for an additional 2-3 minutes until thickened.

Serve:
Once the noodles are tender and the sauce has thickened, remove from heat. Serve the French Onion Beef and Noodles hot, topped with fresh herbs or grated cheese if desired.
