Slow Cooker Garlic Butter Ribeye with Parmesan Mashed Potatoes

Ingredients:
For the Garlic Butter Ribeye:
– 1 lb ribeye steak, cut into large chunks
– Salt and pepper, to taste
– 4 tbsp butter
– 4 cloves garlic, minced
– 1/2 tsp dried thyme
– 1/2 tsp dried rosemary
– 1/2 cup beef broth
– Fresh parsley, chopped (for garnish)
For the Parmesan Mashed Potatoes:
– 6 medium potatoes, peeled and cubed
– 1/2 cup milk (more if needed)
– 1/4 cup butter
– 1/2 cup grated Parmesan cheese
– Salt and pepper, to taste
– Chives or green onions, chopped (for garnish)
Directions:
1. Prepare the Ribeye: Season ribeye chunks with salt and pepper. Place them in the slow cooker. Add butter, minced garlic, thyme, rosemary, and beef broth. Cover and cook on low for 4-5 hours, or until the meat is tender.
2. Make the Mashed Potatoes: About 30 minutes before serving, bring a large pot of salted water to a boil. Add cubed potatoes and cook until fork-tender, about 15-20 minutes. Drain well.
3. Mash the Potatoes: In the pot, mash potatoes with milk, butter, and Parmesan cheese until smooth and creamy. Season with salt and pepper to taste, adding more milk if necessary for desired consistency.
4. Serve: Spoon mashed potatoes onto plates, top with garlic butter ribeye, and garnish with parsley, chives, or green onions.
